2 min noodle slice

I love this simple slice using pantry staples and ingredients from your fridge. Great for an easy dinner with salad, brunch, lunchboxes or a healthy after school snack for kids.
INGREDIENTS
1 pkt Wholegrain 2 Minute Noodles
1 tablespoon vegeta chicken stock powder
1 medium zucchini, grated
1 medium carrot, grated
½ brown onion finely diced
1 clove garlic, crushed
½ cup corn kernals
100g ham, chopped
4 eggs
1 tablespoon Dijonnaise (optional) see note
Sprinkle of chilli flakes(optional)
2 large tomatoes cut into slices
1 cup grated cheese
METHOD
Preheat oven to 180°C/160°C fan forced. Grease and line a 18-20cm square baking pan.
Cook 2 Minute Noodles as per packet directions (without flavour sachet.) then drain. Add noodles to a large bowl with stock powder, zucchini, onion, garlic, chilli flakes, dijonnaise, carrot, corn, ham, eggs and ¾ cup of the cheese; mix well.
Pour into prepared pan; sprinkle with remaining cheese and decorate with tomato slices. Bake for 20 minutes or until golden.
NOTE:
Dijonaise is a blend of Dijon mustard and creamy mayonnaise. In Australia it is made by Maille and is found in the supermarket alongside the mustards. It gives a nice flavour. If you don’t have any just use 1 teaspoon Dijon mustard, omit it completely or make your own using a teaspoon of mustard and a tablespoon of mayonnaise.
You can use the chicken stock sachet flavouring from the noodles but I prefer the vegeta chicken stock powder as it has nice flavour.
