Wendy's African Chop

INGREDIENTS (Serves 10)
MINCE MIXTURE
1 kg beef or chicken mince
1 tablespoon olive oil
2 onions, peeled and diced
4 cloves garlic
440g tin tomato soup/jar of Passata or pasta sauce
2 teaspoons curry powder
1 teaspoon onion powder
1 teaspoon garlic powder
1 400g tin corn kernels or 3 bean mix
METHOD
In a large saucepan sauté onion and garlic in olive oil. Add mince and brown a little. Then add remaining ingredients and simmer for 30 minutes.
RICE
3 cups rice
5 ½ cups water
1 teaspoon salt
METHOD
Place rice and water in a saucepan and cover. Cook for 20 minutes or until water is absorbed.
Serve a large spoonful of mince on top of a spoonful of rice.
SIDE DISHES (served in separate bowls)
These are for people to serve themselves, allowing one dessertspoon for each person. Spoonful after spoonful is placed on top of meat and rice.

Sliced banana
Cubed tomatoes
Diced cucumber
Diced capsicum
Desiccated coconut
Sultanas
Roasted peanuts/cashews
Crushed drained pineapple
Grated cheese
Chilli
Parsley/corainder
My friend Wendy made this for a gathering of 15 adults and children and it was an absolute hit. The children loved it because they could choose their favourite toppings. It is a real communal dish bringing people together. So incredibly simple but so delicious and feeds a crowd. It is a dish about textures; hot, cold, crunchy, sweet, savoury and soft – it works really well.
