Apple Cinnamon Loaf

INGREDIENTS
1/3 cup brown sugar
1 teaspoon ground cinnamon
2/3 cup white sugar
115g butter, softened
2 eggs
1 ½ teaspoons vanilla extract
1 ½ cups plain flour
1 ¾ teaspoon baking powder
½ cup milk
3 apples, peeled and sliced
METHOD
Preheat oven to 180˚C or 160˚C fan forced. Grease and line a loaf pan.
Mix brown sugar and cinnamon in a bowl. And set aside.
Cream butter and sugar until pale and creamy. Beat in eggs 1 at a time. Add vanilla extract. Fold in flour and baking powder. Mix milk into mixture until smooth.
Pour half the mixture into loaf pan. Next add half the apples and half the brown sugar/cinnamon mixture. Lightly pat apple mixture into batter.
Pour the remaining mixture over apple layer. Top with remaining apples and brown sugar mixture. Swirl brown sugar mixture through apples using a spoon.
Bake for 40 minutes or until a skewer inserted into the middle of the loaf comes out clean.
