Apple Cinnamon Tea Cake
This cake is so easy to whip up and very moist. Adored and eaten in a heartbeat by my family.
80g butter, softened
½ cup caster sugar
1 tsp vanilla essence
1 cup self-raising flour
1 ½ tsp ground cinnamon
½ cup milk
2 apples, cored, cut into quarters, thinly sliced
1 tbsp melted butter
1 tbsp caster sugar
Preheat oven to 180˚C or 160˚C fan-forced. Grease and line a 20cm round spring form cake tin.
Cream butter and sugar until light and creamy. Add egg and vanilla, and beat until combined.
Sift flour and cinnamon. Add to butter mixture. Add milk and fold in until just combined. Transfer to tin and smooth the top.
Arrange the apple slices on top and bake for 30 minutes until golden brown and firm to touch. Brush cake with melted butter and sprinkle with caster sugar.
