Judith's Boiled Fruit Loaf

INGREDIENTS
450g sultanas or mixed fruit
2 cups water
1 ½ cups of sugar
Pinch of salt
60 grams butter
3 cups flour
1 teaspoon bicarbonate of soda
1 teaspoon ground cloves
1 teaspoon mixed spice
METHOD
Pre-heat oven to 180˚C/160˚C fan-forced. Line a loaf pan with baking paper.
In a large saucepan boil sultanas, sugar, salt, water and butter for 5 minutes. Remove from element and leave to cool. Then add sifted flour, bicarbonate of soda and spices and mix until well combined.
Bake for 45 minutes or until skewer comes out clean. Cool on a rack.

This recipe belonged to Judith, an old work colleague of my mums. My mum has a well-loved brown recipe folder and to this day I still can see this recipe in my mind in her book. One of my facebook followers, Jayne, from NZ recently asked me if I had a recipe for a good boiled fruit loaf. Straight away I remembered this recipe in my mums book. So I got her to hunt it out for me. I remember making it often when I was living at home. I remember always having trouble deciphering my mother’s handwriting in the book as it was written in the old handwriting style. I love this loaf because it is so easy to whip up and so moist.
