Broccoli Bacon Pinenut Salad

My family loves this simple raw broccoli salad served with BBQ meat on a hot summers night.

 

INGREDIENTS

1 head broccoli, cut into small florets

4 rashers bacon, fried, cut into squares

¼ cup toasted pinenuts

60g feta, crumbled

¼ red onion, finely diced

¼ red capsicum, finely diced

 

DRESSING

2 tbsp sour cream

2 tbsp mayo

2 tbsp lemon juice

 

METHOD

Place all the salad ingredients in a large bowl.

Mix dressing ingredients in a small bowl.

Spoon dressing over salad ingredients and mix through gently. Chill in the fridge until ready to serve.
