Cheats Apricot Danish

Create these scrumptious apricot Danishes at home with this simple recipe. Substitute apricots for your favourite fruit.

INGREDIENTS (serves 8 )
300 g Fresh Ricotta 
3 tbsp Icing Sugar 
1 tsp Vanilla Essence
1/2 teaspoon ground cinnamon 
2 sheets Frozen Puff Pastry, thawed 
2 x 410 g cans Apricot Halves, drained 
1 Free Range Egg, lightly beaten 
cinnamon sugar
Icing Sugar, to dust

Preheat oven to 180°C or 160ºC fan. Line two baking trays with non-stick baking paper. Combine ricotta, icing sugar, cinnamon and vanilla until smooth. Cut each sheet of pastry into quarters. Spread about 2 tbsp of ricotta mixture diagonally across each square. Halve apricots and arrange, cut side down, over ricotta. Fold two corners in over the apricots and press together gently. Arrange on baking trays and brush pastry with egg. Sprinkle with cinnamon sugar. Bake for 15-20 minutes, or until golden brown. Place onto wire racks to cool. Dust with icing sugar and serve.
