Cheese Ball

Try this for something a bit different on the cheese platter this Christmas. I have been making this ball for 20 plus years. I am not sure where I got the original recipe from but I remember publishing it in the Central Normal Primary School (Palmerston North, New Zealand) Cookbook when I was teaching there under the staff favourites. You can use the base recipe and try your own variations.

250g cream cheese, at room temperature
1 cup grated cheese
½ cup ham, finely chopped
½ cup dried apricots, finely chopped
3 spring onions, finely chopped
1 teaspoon paprika
½ teaspoon curry powder
granulated nuts and/or finely chopped chives or parsley

Mix all ingredients in a bowl. Shape into a ball. Roll in combined nuts and parsley.
Wrap in Glad Wrap. Refrigerate over night. Serve with a selection of crackers.
