Double Chocolate Raspberry Cups

Make these delectable little bites the centre of your dessert table this Christmas. They look absolutely stunning, are so simple to make and taste divine.

100g milk chocolate, chopped
½ cup thickened cream
2 packets of milk chocolate cups (see note)
22 small fresh raspberries
icing sugar, to dust

Place milk chocolate in a heatproof,microwavesafe bowl. Microwave on medium (50%) for 1 - 2 minutes , stirring every 30 seconds with a metal spoon, or until smooth. Set aside for 10 minutes to cool.
Using electric beaters, whisk cream until soft peaks form. Add melted chocolate. Using a large metal spoon, gently fold until well combined. Spoon chocolate mixture into a snaplock bag. Snip off 1 corner. Pipe chocolate mixture into each cup. Top with a raspberry. Refrigerate until required. Dust with icing sugar. Serve.

NOTE: Chocolate cups are available from the bread, meringues and cake isle of the supermarket. I got these at Woolworths (Australia).
