Chocolate Chip Biscuits

Chocolate Chip biscuits are always popular in my house. I normally make the good old faithful kiwi Edmonds cookbook recipe but I have been trying a few different recipes lately and I really love this version.

125g butter, softened
½ cup lightly packed brown sugar
1/2 cup caster sugar
½ tsp vanilla essence
1 egg
1 ¾ cup self-raising flour
½ tsp salt
1 cup chocolate chunks

Preheat oven to 180˚C or 160˚C fan forced and line 2 baking trays with baking paper.
Cream butter, sugar and vanilla until pale and creamy. Add egg and beat. Sift in flour and salt and mix until combined. Stir in chocolate chunks. Roll heaped teaspoons of mixture into balls and place on a tray. Press with a fork. Bake for 12-15 minutes or until golden
