Chocolate Chip Muffins
I love recipes that are uncomplicated, inexpensive and that have ingredients which are pantry staples. These muffins fit my cooking style of maximum flavour, minimum fuss. Also loving my square muffin pans for that modern look.
2 ½ cups self-raising flour
½ cup caster sugar
1 cup chocolate chips
1 ¼ cups milk
¼ cup greek or plain yoghurt
2 tbsp melted butter
1 tsp vanilla essence
Preheat oven to 180˚C or 160˚C fan-forced. Spray a 12-hole muffin pan or line with muffin cases.
In a large bowl place flour, sugar and chocolate chips. Mix to combine.
In a jug place the milk, yoghurt, vanilla, egg, and melted butter. Whisk to combine.
Pour the wet mixture into dry mixture and mix until just combined.
Divide into muffin pans and bake for 15-20 minutes or until lightly golden and bounce back when pressed.
