Chocolate Mint Slice

This chocolate peppermint slice is just like a Mint Slice biscuit but even better - because it's homemade.
INGREDIENTS
125g butter
1 teaspoon vanilla essence
4 tablespoons icing sugar
1 ¾ cups plain flour
2 tablespoons cocoa
350g icing sugar
1 tablespoon neutral flavoured oil e.g. rice bran oil
¼ cup milk
½ teaspoon peppermint essence
180g dark chocolate
1 teaspoon copha or vegetable oil
METHOD
Preheat oven to 180ËšC or 160ËšC fan-forced. Spray and line a slice pan with baking paper. Cream butter, vanilla and 4 tablespoons icing sugar until pale and creamy. Add flour and cocoa and mix well. Press into a slice tin and bake for 12-15 minutes or until firm to touch. Remove from oven and sit until cool enough to touch.
Turn out from tin and place on a wire rack. Mix together 350g icing sugar, vegetable oil, milk and peppermint essence. Spread over slightly warm base. When peppermint has set cover with melted chocolate. Leave the chocolate until just firm but not solid and cut into small slices.
NOTE
Add a few drops of vegetable oil or copha to the melted chocolate will give it a glossy finish when set.
