Cobie's Date Loaf
Cobie is a beautiful humble lady with such a servant heart who is a treasured member of our church family. She is world famous for her moist date loaf, which she brings to playgroup every Thursday. Everyone loves it and not a crumb is left on the plate. I feel truly blessed to have this recipe in my hands! I will treasure it always.
1 ½ cups dates, halved
½ cup sugar
½ cup chopped walnuts (optional)
1 tsp bicarbonate soda
1 cup boiling water
1 ½ cups self-raising flour
Pre-heat oven 180˚C/160˚C fan-forced.
Grease and line a loaf pan with baking paper.
Place chopped dates, sugar, walnuts, butter, soda and salt in a bowl. Add boiling water and allow to stand until mixture is cool. Add sifted flour and mix well. Pour into greased loaf pan.
Bake for 30-35 minutes.
