Coca-Cola Chocolate Cake

Adding Coca-Cola and marshmallows to this chocolate cake makes it incredibly moist and light. It is impossible to stop at one piece!
INGREDIENTS
1 ½ cups marshmallows
½ cup light olive oil
115g butter
4 tbs cocoa powder
1 cup Coca-Cola
1 tsp bicarbonate soda
2 eggs
1 ¼ cups sugar
1 tsp vanilla
½ cup buttermilk
2 cups self-raising flour
ICING
2 cups icing sugar, sifted
3 Tbs cocoa powder, sifted
50g butter, softened
Coca-Cola to mix to desired consistency
METHOD
Preheat oven to 180˚C or 160˚C fan forced. Grease and line a large round spring form tin with baking paper.
Place marshmallows, oil, butter, cocoa, coca-cola in a large saucepan. Heat and stir until melted. Mix in bicarbonate of soda. Set aside to cool slightly.
In a bowl blend self-raising flour, sugar, eggs vanilla and buttermilk using a hand held electric beaters. Add chocolate mixture and mix together until combined. Pour into prepared pan.
Bake for 50 – 60 minutes or until cake bounces bake when pressed in the centre.
