Classic Coleslaw

Coleslaw is great in hamburgers and hotdogs, is a great accompaniment to barbequed meats, roast chicken and teams well with hot chips or potato mash.


½ small red onion, finely diced
¼ red cabbage, shredded
¼ green cabbage, shredded
2 carrots, peeled and grated
¼ cup chopped parsley

¼ cup mayonnaise
¼ cup sour cream
1 teaspoon Dijon mustard
1 tablespoon lemon juice
salt and pepper


1. Place onion, cabbage, carrot and parsley in a bowl.
2. Whisk mayo, sour cream mustard and lemon juice in a bowl. Season with salt and pepper. Add to cabbage mixture. Toss to combine. Serve.

Handy Hint: you can also include other fruits and vegetables in your coleslaw. For a twist add grated apple, finely sliced celery, raisins, radishes thinly sliced, red or yellow capsicum thinly sliced or spring onions.
