    Colourful Brown Rice Salad

    INGREDIENTS

    1 ½ cups brown rice 
    Salt to taste
    3 spring onions finely chopped
    1 red capsicum core seeded and chopped
    1 green capsicum cored seeded and chopped
    ¾ cup raisins
    75g roasted unsalted peanuts or cashews
    2 tablespoons chopped parsley
    2 tablespoons soy sauce

    Soy Sauce Dressing
    ¼ cup light olive oil
    2 tablespoons soy sauce
    1 tablespoon lemon juice
    2 teaspoons sugar
    1 clove crushed garlic
    1cm root ginger finely chopped
    salt and pepper to taste

     

    METHOD
    1. To make the soy sauce dressing, put all sauce ingredients into a jar with a lid and shake well to blend.
    2. Cook rice in boiling salted water for 40-45 mins until soft. Rinse drain well and cool.
    3. Place rice in a bowl and add remaining ingredients.
    4. Toss thoroughly before serving.
    5. 10 minutes before serving, add the soy sauce dressing to the rice mixture and toss well. Then serve.

    Quick tip : Instead of cooking rice you can use a 450g packet of Microwave Sun Rice Fragrant brown rice.
    Serve with BBQ meat, cold meats or take to work for lunch.
