Double Chocolate Cream Cheese Muffins

Muffins with a surprise cream cheese filling were very popular in the 1990’s in New Zealand. I loved them then and I still love them now.
INGREDIENTS
120g cream cheese
3 tablespoons sugar
2 cups flour
3/4 cup chocolate chips
1/2 cup sugar
3 tablespoons cocoa
4 teaspoons baking powder
1/2 teaspoon salt
1 egg, beaten
60g butter, melted
1 cup milk
METHOD
Preheat oven to 190Ëš C or 170Ëš C fan forced. Spray a 12 hole medium muffin pan.
Beat cream cheese and sugar together and then set aside. In a large bowl, combine flour, chocolate chips, sugar, cocoa, baking powder and salt, make a well in the centre. In a jug mix egg, butter and milk until combined and add to flour mixture. Combine until dry ingredients are wet. Spoon some chocolate batter into each muffin tin and then drop 1 teaspoon of cream cheese mixture on top, cover with chocolate batter.
Bake for 15-20 minutes until springy to touch.
