Jersey Caramel Cookies

INGREDIENTS
60g butter
1/3 cup golden syrup
1/3 cup brown sugar
1 1/2 cups self-raising flour, sifted
8 soft jersey caramels, cut in half

METHOD
Preheat oven to 180˚C or 160˚C fan-forced. Line a baking tray with baking paper.
In a saucepan melt butter, golden syrup and brown sugar over a low heat, stirring until the sugar has dissolved. Add the flour to the butter mixture and mix until a dough forms. Roll tablespoons of mixture into balls and place on baking tray. Press down a caramel into each ball so that the ball flattens.
Bake for 10-12 minutes or until golden. Mine took 1O minutes.

If you love Jersey Caramels then you are going to LOVE these Donna Hay cookies. I found it hard to track down Jersey Caramels here in Melbourne. The supermarkets use to sell them but the major players have stopped stocking them. After a “shout-out” on Facebook to friends I found them at K-Mart and specialized Lolly shops.
