This slice is so refreshing and light. You can substitute the lemons for lime or orange.
¼ cup icing sugar, sifted
1 cup plain flour, sifted
1 cup caster sugar
2 teaspoons grated lemon rind
½ cup lemon juice
¼ cup plain flour
Preheat the oven to 180˚C/160˚C fan-forced. Line a slice tin with baking paper.
Cream the butter and icing sugar with electric beaters until smooth and creamy.
Add the 1 cup of flour. Mix until combined. Press the base mixture into the prepared pan and bake for 15 minutes or until golden.
In a small bowl combine the eggs, caster sugar, extra flour, juice and rind and whisk until well combined.
Pour the mixture over the hot cooked base and bake for a further 20 minutes or until the mixture is firm and set.
Cool in the pan. Dust with icing sugar and cut into squares.
