No Bake Lemon, Sultana and Coconut Slice

INGREDIENTS
Base
½ cup sultanas
¼ cup apple juice
200g plain sweet biscuits, crushed
200g sweetened condensed milk
1 cup shredded coconut
zest of 2 lemons
70g butter, melted
Icing
2 cups icing sugar, sifted
juice of 2 lemons
20 g butter
GLACE LEMON TOPPING (optional)
1 lemon sliced into thin rings
2 tbsp caster sugar
¼ cup water
METHOD
Grease and line a 20cm x 20cm square pan
In a small saucepan over a low heat simmer the sultanas in the apple juice for 10 minutes. Leave to cool.
In a large bowl add crushed biscuits, condensed milk, coconut, zest, and melted butter. Stir to combine and then press into tin.
ICING: Combine the icing sugar with the juice of 2 lemons and the 20g of melted butter. Spread over the slice.
GLACE LEMONS: Put the sugar and water into a small saucepan and bring to the boil. Add the lemons slices. Reduce heat to simmer and simmer until translucent. Cool, then arrange on the top of the slice before serving.
