Gluten Free Mandarin & Almond Cake

INGREDIENTS

3 mandarins unpeeled

1 cup sugar (raw, caster, natural sweetener)

6 eggs

2 cups (250g) almond meal



METHOD

First: Place mandarins unpeeled in a medium sized lidded saucepan and cover with cold water. Bring to the boil and simmer for 1 hour. Watch the water level as it evaporates. Just add more boiling hot water from a kettle. Drain and cool.

 

Next: Pull mandarin apart and remove any pips.

Puree the pulp and skin.

Using an electric mixer beat the eggs and sugar until thick and glossy. This will take 10 -12 minutes.

Then add the puree and almond meal. Combine well.

 

Pour into a greased and lined round 8-inch(22cm) cake tin and bake in a preheated 160˚C oven for 1 hour.

Cool.

Serve with double cream

OMG this cake is so moist and delicious and it is only 4 ingredients. Mandarins are in season and this recipe is a great way to use those leftover mandarins sitting in your fruit bowl.
