Marshmallow and Apricot Roll

NOTE:
Make a Christmas version using chocolate chips, marshmallows and glace cherries.
Roll into balls instead of a log.
Amazing taste and super easy to make. You won’t be able to stop eating these babies!
INGREDIENTS
1 packet of Marie/Milk Arrowroot biscuits, finely crushed
1 cup finely chopped dry apricots
1 cup baby marshmallows finely chopped
1 can sweetened condensed milk
½ cup desiccated coconut
METHOD
Combine biscuit crumbs, chopped apricots and marshmallows in a bowl.
Stir in condensed milk. Mix well.
Shape the biscuit mixture into 1 large log shape, or 2 smaller logs. Roll the log in the coconut. Roll up firmly in foil or gladwrap.
Freeze the roll. To serve, remove from the freezer and slice. Serve when just defrosted. Nice eaten frozen as well!
