Lennie's Mini Baked Cheesecakes

INGREDIENTS (Makes 24)
3 x 250g blocks Philly Cream Cheese, softened
1 cup caster sugar
5 eggs
1 teaspoon vanilla essence

PINK FILLING
250ml sour cream
½ cup castor sugar
Red cochineal to colour

METHOD
Preheat oven to 180˚C or 160˚C fan-forced.
Beat cream cheese using electric mixer until smooth. Add sugar and beat until combined. Next add eggs one at a time mixing after each addition until well combined. Add vanilla essence and mix well.
Spoon into foil lined muffin cases.
Bake for 20 minutes or until lightly browned. Remove from oven and allow to cool. Cheesecakes will sink in the middle.

Filling: Using electric beaters mix the sour cream and caster sugar. Add colouring. Mix well and fill the sunken cheesecakes with the filling.
Return to oven for 5 minutes. Allow to cool then refrigerate.

I must give credit to my awesome Irish friend Lennie for these tasty little cheesecakes. They are really popular at parties and go like hotcakes. It was hard to get the recipe off her, like months of asking and begging, but after bribery and corruption it was given!!! The Percy family love the Stevo’s and love doing life with them. So glad our paths crossed.
