Orange and Date Muffins

Orange and date are a tasty combination. These muffins are made quickly in the food processor and they are really moist. Eat straight from the oven or make them a wee bit fancy by adding a cream cheese frosting.

INGREDIENTS (Makes 12)
1 orange
1 cup sugar
1 large egg
½ cup milk
100g butter, melted
1 cup plain flour
½ cup almond meal
1 tsp baking powder
1 tsp baking soda
1 cup dates, halved and soaked in boiling water, drained

CREAM CHEESE FROSTING
125g cream cheese
1 ½ cups icing sugar
zest of an orange
2 tablespoons orange juice
toasted almonds and orange zest to decorate

METHOD
Preheat oven to 200ËšC or 180ËšC fan-forced. Grease a 12-hole medium muffin pan. Soak halved dates in boiling hot water and set aside.
Cut unpeeled orange into quarters, place in a food processor with sugar and process until orange is smooth. Add egg, milk and melted butter and process until combined. Add dry ingredients and pulse until just combined. Drain water from dates and fold dates through mixture.
Spoon mixture into muffin pans and bake for 12-14 minutes or until golden and springy when lightly pressed.
Cool on a rack. Then ice with cream cheese frosting if desired.

CREAM CHEESE FROSTING
Put all ingredients into a bowl and mix with electric beaters until smooth. Spread on muffins
