Julies Oriental Pork Fillets

INGREDIENTS
2 medium whole pork fillets
2 cloves garlic, crushed
2 teaspoons ginger
1 teaspoon five spice
1/3 cup Hoisin sauce
1/3 cup tomato sauce
4 tablespoons honey
2 tablespoons soy sauce
1 teaspoon sweet chilli sauce
1 teaspoon red food colouring (optional)

METHOD
Put all ingredients into a shallow baking dish. Mix well to combine. Add pork fillets, turning to coat. Leave to marinade for 8 hours, turning occasionally. Lift out pork from marinade and place on a rack over a roasting dish. Bake at 190˚C or 170˚C fan-forced for 20 minutes or until juices run clear when tested with a skewer. Alternatively sear on a BBQ. Baste with marinade during cooking

I have the most wonderful neighbour, Julie. Julie is an amazing single mum who is the full-time carer of three beautiful children two of whom both have additional needs. She does the most amazing job and I really admire her strength, determination and courage. Julie made this for Christmas lunch last year and we cooked it on the BBQ. It was delicious.
