Passionfruit and Lemon Slice
This sweet fruity slice is sure to impress your guests.
1 cup Self-raising Flour, sifted
1 cup Desiccated Coconut
1/2 cup Caster Sugar
125 g Butter, melted
125 g Cream Cheese, chopped, at room temperature
395 g Can of Sweetened Condensed Milk
4 Passionfruit, pulp of
1/3 cup Lemon Juice
Rind of 1 lemon
Preheat oven to moderate, 180˚C or 160˚C fan-forced. Lightly grease and line an 18 x 28cm slice pan with baking paper.
In a large mixing bowl, combine flour, coconut and sugar. Make a well in the centre of the dry ingredients and add the butter, mixing to combine.
Press mixture into prepared pan. Bake for 15 minutes, until golden. Allow to cool.
Beat cream cheese in a large mixing bowl until creamy. Gradually beat in condensed milk, passionfruit pulp, rind and lemon juice.
Spread evenly over cooled base and chill for 3 hours or overnight, until firm. Cut into squares to serve. Store in an airtight container in the fridge.
