Pineapple Lump Log
120 g butter
250g malt biscuits
200g sweetened condensed milk
190g chopped pineapple lumps
Desiccated coconut, for rolling
Melt butter and condensed milk in a small saucepan. Do not boil.
Crush the malt biscuits.
Chop the pineapple lumps into quarters.
Mix altogether in a large bowl.
Shape into a log and roll in coconut.
Place on a sheet of foil/gladwrap and wrap tightly. Refrigerate until firm. Cut into slices.
I love mine frozen straight from the freezer.
