Rachel's Rice Salad

One of the things I love most about summer is salads and I am always on the look out for delicious new salad recipes to try as I tend to get bored with the usual coleslaw, lettuce and potato salads. I was out for dinner recently and my amazing friend Rachel made this rice salad. It was delicious and reminded me a bit of waldorf salad. On those hot summer evenings when you don’t feel like cooking this salad will be the ticket. 

INGREDIENTS (Serves 4-6)
1 red apple, diced
2 stalks celery, thinly sliced
½ red capsicum, diced
1 cup rice (I used a mixture of wild rice (red, black, brown) and white rice)
¼ cup light mayonnaise or french dressing
handful of chives and parsley, chopped
salt and pepper
juice of half a lemon

METHOD
Cook rice according to packet directions and cool.
Chop apple, celery, and capsicum. Place into a large bowl and toss in the lemon juice. This stops the apple turning brown.
Add rice and mayonnaise. Toss together until thoroughly mixed. Stir through chives and parsley. Season with salt and pepper. Refrigerate until required.
