Seafood Marinara and Tomato Soup

This hearty seafood soup is a big hit with my family and is tonights dinner on a cold wintery Melbourne day.
INGREDIENTS
¼ cup olive oil
2 leeks, finely chopped
2 cloves garlic, crushed
400g tin diced tomatoes
100ml dry white wine
1 tsp sugar
1L fish stock
1kg Marinara seafood mix
METHOD
Heat the oil in a large saucepan and cook the leeks and garlic over a low heat for 10 minutes. Add tomatoes and wine and cook for 5-10 minutes. Add the sugar and stock and simmer for 10 minutes. Season to taste with salt and pepper. Add the marinara mix and bring to the boil and then reduce to a simmer for 5 minutes.
Ladle into bowls and serve with crusty warm bread
