Sweet Chilli Chicken

This would have to be one of our firm family favourites served with rice and Asian greens. So simple. So delicious.

INGREDIENTS (serves 4)
1kg thigh fillets, lovely legs, drumsticks
¼ cup flour to coat
2 tbs apricot jam
2 tbs tomato sauce
2 tbs soy sauce
2 tbs sweet chilli sauce

METHOD
Turn on slow cooker to high and coat with a non-stick spray.
Pat the chicken pieces dry with a paper towel. Then shake them with the flour in a plastic bag to coat. Leave aside.
Stir the remaining ingredients together in the bottom of the slow cooker bowl. Turn the chicken pieces in this mixture to coat. 
Put the lid on the slow cooker and cook on high for 4 hours, or on low for 7-8 hours. Serve with Asian greens on rice with any remaining cooking juices spooned over the chicken.
