Turkish Delight Cookies

One of my favourite treats is a Turkish Delight Chocolate bar with a long black coffee, therefore I was unable to resist these sweet morsels.

340g packet vanilla cake mix
2 eggs, lightly beaten
¼ cup vegetable oil
4 x 55g Turkish Delight chocolate bars, chopped

Preheat oven to 180C/160C fan-forced. Line 4 large baking trays with baking paper.
Place cake mix in a bowl. Make a well. Add egg and oil. Mix well to combine. Stir in Turkish Delight pieces. Roll 2 level teaspoons of mixture into a ball, making
sure each ball has at least 2 pieces of Turkish Delight. Place 6cm apart on trays.

Bake biscuits, 2 trays at a time, swapping position of trays halfway through cooking, for 12 to 15 minutes or until edges are golden and tops are just firm to touch.


Leave to cool for 5 mins then transfer to a wire rack to cool completely. Cook remaining 2 trays.
