Zucchini Slice

I just love anything savoury and right now this slice is my go to recipe for my husbands work lunch and school lunchboxes. After 11 years at school my teenagers are over sandwiches, rolls and wraps and don’t want to see another sandwich again in a hurry. I remember that feeling too. I often make this slice for an easy dinner with a garden salad. I have added lots of different condiments to make it really tasty as zucchini slice can be bland.

INGREDIENTS
5 eggs
1 cup self-raising flour
375g zucchini, grated
½ brown onion, finely chopped
200g rindless bacon, diced
1 cup grated tasty cheese
½ cup shaved parmesan cheese
¼ cup olive oil,
1 tsp garlic salt
1 tsp garlic granules
1 tsp Vegeta gourmet stock powder
1 tsp Dijon mustard
a few shakes of chilli flakes

METHOD
Preheat oven to 180°C. Grease and line a 30 x 20cm lamington pan.
Beat the eggs in a large bowl until combined. Add the flour and beat until smooth, then add zucchini, onion, bacon, oil, cheeses, garlic salt., garlic granules, stock powder, mustard, chilli flakes and stir to combine. Pour into the prepared pan and bake in oven for 35- 40 minutes or until cooked through and set.

NOTE:
The last 5 ingredients are optional but if used they will give this humble slice a sensational flavour.
