Butter Chicken Meatballs

INGREDIENTS

1 tablespoons olive oil

500g chicken mince

1 egg

¼ cup breadcrumbs

½ onion finely diced

fresh herbs: chives, parsley, coriander (optional)

1 clove garlic, crushed

salt and pepper to taste

1 large jar of Butter Chicken Simmer sauce

 

TO SERVE:

Poppadums

Tzatziki

Side salad

Rice

 

METHOD

 

In a large bowl add the chicken mince, egg, breadcrumbs, onion, garlic and fresh herbs if using. Mix together well. Season with salt and pepper. Roll heaped teaspoonfuls into balls.

Fry the meatballs in a large frying pan with a little bit of olive oil. Then add the jar of simmer sauce. Simmer for 10 minutes on a low heat. Serve with rice, salad, poppadums and tzatziki.

Tzatziki

 

1 lebanese cucumber grated

2 tablespoons chopped fresh mint leaves

1 cup plain Greek yoghurt

1 clove garlic crushed

A squeeze of lemon juice.

 

Combine all ingredients in a bowl. Season with pepper. Cover. Refrigerate until needed.

 

 

 

This is a new recipe I have added to my families “easy” weeknight meals repertoire. I have made it twice now and it is a hit with the whole family, which is a miracle in itself! Tuesday night is very busy for our family so I need a quick tasty meal that I can whip up in 30 minutes. I always have a store bought jar of butter chicken simmer sauce on hand in the pantry, so I pick up some chicken mince, tzatziki and some poppadums from the supermarket. I cook some rice in the microwave, microwave the poppadums, make a bit of a side salad and a delicious dinner is served in 30 minutes.
