Coconut Slice

Not only is this slice easy to make but it is moist and delicious. 

INGREDIENTS
1 cup Self-Raising flour
Pinch of salt
¾ cup caster sugar
1 cup desiccated coconut
125g butter, melted
2 eggs, lightly beaten
½ cup milk
1 teaspoon vanilla

Icing
1 1/3 cups icing sugar
20g butter, softened
1 tablespoon boiling water
1 drop pink food colouring
2 tablespoons desiccated coconut

METHOD
Pre-heat oven to 180˚C/160˚C fan-forced.
Grease and line a rectangular slice pan.
Combine flour, salt, sugar, coconut and butter in a bowl. Add eggs, milk and vanilla. Spread into prepared pan. Bake for 20-25 minutes or until golden and top is firm to touch.

Make Icing Sift icing sugar into a bowl. Add butter. Stir to combine. Stir in bowling water and mix. Tint icing pink with food colouring. Spread icing over slice and sprinkle with coconut.
