Wendy's Kitchen Table
Old-fashioned Gingerbread Loaf

This old-fashioned gingerbread loaf goes amazingly well with a cup of tea.
INGREDIENTS
50g butter
I Tbsp golden syrup
1 egg
1 cup flour
1/2 cup brown sugar
1 tsp baking powder
2 heaped tsp powdered ground ginger
1 heaped tsp mixed spice
1 tsp baking soda
¾ cup milk or buttermilk (I used buttermilk)
METHOD
Preheat oven to 190˚C/ Line a loaf pan with baking paper.
In a large saucepan, melt the butter and golden syrup together.
Add egg and sugar, mix well, then add all other dry ingredients except the baking soda.
Mix the soda with the milk and stir in. Pour into pan and bake for 30-40 mins or until cooked when a skewer inserted into the centre comes out clean with no fudgy crumbs attached.
Cool on a wire rack, slice and butter when cool.
