Mint, Cucumber, Strawberry and Watercress Salad

Complete your festive table with this fresh flavoursome salad.

INGREDIENTS
1 punnet strawberries, hulled, quartered
1 tablespoon balsamic vinegar
¼ bunch mint leaves, thinly sliced
4 Lebanese cucumbers
100g watercress 
salt and pepper to season
juice of half a lemon
1 tablespoon avocado oil

METHOD
Put strawberries, balsamic vinegar and mint in a large bowl, then set aside. Halve cucumbers lengthways, scoop out seeds, then slice into fine ribbons. Add to strawberry salad with watercress. Season with salt and pepper and then add lemon juice and oil. Toss well, then serve.
