Raspberry Bliss Balls

INGREDIENTS
1 cup frozen raspberries
10 medjool dates, seeds removed
1 cup almond meal
2 cups desiccated coconut
1 teaspoon vanilla extract
METHOD
Place all the ingredients into a food processor and process until the mixture comes together in a ball. Shape teaspoonfuls of the mixture into balls.
Leave the balls as they are or alternatively roll in coconut, cacao powder, or drizzle with melted dark chocolate. Store in the fridge or freezer.
TIP
Try other frozen berries: strawberries, blueberries or mango pieces.
Every fortnight I volunteer by baking a GF/DF morning tea item for the beautiful mums who attend a Mainly Music Programme. This week I have made these bliss balls that are totally amazing, seriously! I could have eaten the whole mixture! They are free of gluten, grains, dairy, egg and refined sugar.
They make a perfect after school snack and are great when you want a sweet treat without the guilt.
