Sakata Chicken Drumsticks
Our whole family love these super –duper crunchy chicken drumsticks. I use to make them often when my children were younger but I haven’t made them in years. While hunting for a recipe recently I stumbled across them once again. Our dinner tonight with home-made coleslaw. Yum!
100g packet Sakata Rice Crackers (Barbeque)
2 teaspoons paprika
¼ cup parsley, finely chopped
2 tablespoons sesame seeds
1/2 teaspoon salt
½ teaspoon freshly ground black pepper
olive oil spray
1 kg drumsticks
Preheat oven to 220˚C or 180˚C fan-force. Line a baking tray with baking paper.
Process rice crackers in a food processor until they resemble fine crumbs. Transfer to a bowl and stir in other ingredients. Spray chicken pieces all over with olive oil and roll in crumb mixture. Bake for 45 minutes turning half way.
