Savoury Tuna Mix

425g tin tuna in springwater, drained
½ red capsicum, finely diced
¼ red onion, finely diced
2 tomatoes, finely diced
2 tablespoons chopped parsley
salt and pepper to taste
½ cup mayonnaise (I use ¼ cup whole egg, ¼ cup Praise traditional)

Mix all ingredients in a bowl and chill in fridge until required.

Sometimes the best things in life are simple and this mix definitely meets that criteria. I recently had this tuna mix in The Qantas Club Lounge at Sydney Airport. It was delicious so I came home and attempted to recreate it. Nice on crackers, in sandwiches and wraps, French stick slices and delicious in toasted sandwiches with a slice of cheese.
