Weetbix Slice

INGREDIENTS
Base

180g butter, melted
1 teaspoon vanilla essence
1 cup shredded coconut
3 weetbix, crushed
1 cup flour
1 tsp baking powder
¾ cup sugar
¼ cup cocoa
 

Icing
200g good quality baking chocolate, milk or dark
16 Freckles

METHOD
Preheat oven to 180˚C or 160˚C fan forced. Grease and line a 20cm x20cm square cake pan.
Combine dry ingredients in a large bowl. Pour in melted butter and vanilla essence. Mix well. Press mixture into pan and bake for 20 minutes.
Allow to cool and then ice.

ICING
Break chocolate into pieces and put in a microwave proof glass bowl. Heat on power level 4 for 1 minute bursts until melted. Mine took 3 minutes. Pour over base and place Freckles on top.

NOTE: Instead of Freckles use sprinkles or coconut. You can use icing sugar and cocoa powder for icing instead of melted chocolate.

Whose mum made weetbix slice when you were growing up? Mine certainly did and I love it just as much today as I did way way way back then in the 1970’s. It was a real kiwi favourite and a great way to use up all those crumbs in the bottom of the weetbix packet. The same slice base but with real chocolate icing and a Freckle on top. So pretty!!!!
